Missing field names

I have a form that loads data using several lookup fields. This works fine until in another form I use a lookup field over the first table of data. When I go to the display options to choose the data the fields in the table that were lookup fields in the original form are not in the list even though they appear in the table view of the first form. Why can't I access these fields?
