[organization] How to manage projects' priority

Hi dears,
we love zoho project, I'm wondering how do you manage projects order.
We are used to work in this way:
When one of our colleagues complete a task, and he is ready for committing to a next task, he scroll his tasks, ordered in project priority, and usually pick the 1st available/assigned task with the highest project priority.
This organization worked very well in the past for us, but we are not able to do the same in zoho projects.
We have dozens of projects. And it is difficult with zoho  projects, to find new task with the high company priority.
Do you manage a similar workflow? What are you doing differently?
