Restricting permission levels and viewing rights of employees, contractors and clients

I have heard that you cannot restrict the access rights for different types of users. For example if you want to restrict lower level employees seeing different content of a project. Or if client has access, they see EVERYTHING. 

We are thinking of changing to Zoho CRM and Zoho Projects, however we need to control some level of information. Could someone please confirm if this is possible?

Also, can restrictions be placed on who see invoicing and payments?
