Trying to get Field IDs to display Labels

This should be a simple thing, but I'm a little dense. I am creating records that use lookups. I can't figure out how to get the selection to show up as the label. Right now all I'm getting is the Unique ID, which isn't helpful to the user.

Any ideas where I should be looking?
