Changing the mapping of fields when parsing

When I do a bulk upload of CVs I use the "Import from Document" function.  (I upload .docs and .pdfs)  Is there any way to change the mapping that is used during the process to extract data from the CVs into the database?  I have created a number of new fields and I would like future bulk uploads to load straight into them rather than me doind this manually.
