Customized fields in "Work Details" and "Educational Details" sections

It would be very helpful to add/edit/delete fields in the "Work Details" and "Educational Details" sections. (This is especially important for the education section since it's actually illegal in the state of California to ask an applicant for their "year of graduation" since that could be used to infer a candidate's age.)

Using the standard employment application from ADP, Inc. (a large, multi-national payroll and HR outsourcing firm), a more useful set of fields would include those shown below. I'm sure that other users would have their own lists though which is why user customization would be especially useful.

Work Details:
* Company Name
* Company Address
* Company Telephone
* Job Titles and Duties
* Name of Supervisor
* May we contact? (Yes or No)
* Dates Employed (From and To)
* Reason for Leaving

Educational Details:
* Educational Institution Name
* Educational Institution Address
* Graduated (Yes or No)
* If no degree, credits earned
* Type of degree received or expected
* Major
* Minor
* Overall Grade Point Average (GPA)
