How to turn off quoting of message in reply?

Hi,

Does anyone know if it is possible to turn off the feature where a reply automatically includes the previous message as quoted text?

I may have missed something obvious, but I cannot see how to stop this behaviour, which is often not appropriate for the emails I send.

Can this feature be turned off, and if so how?
