This means there is a field that only the user entering in the field and admin can see, but other users cannot see.

This could be adaptable to be a phone number that should be kept hidden, or some secret notes on the candidate, etc.

Adding something like this would be genius and would make Zoho my DB of choice.

This one thing would make me 100% satisfied with Zoho Recruit. Without this feature I am maybe 20% satisfied.
