Preserving Email History With Client and Prospects

We have clients who have staff that we interact with. When that staff member leaves and we delete their record in Zoho (to keep things neat and tidy) all their email interactions disappear too. Is there a way, or rather a best practice, to preserve this email history without needing to hold onto a staff record? Or at the very least a way to transfer these emails over to the new replacement without needing to save the former's email address?
