When assigning applications such as Expense or People using the Groups feature, is there any way to accommodate situations where an Employee ID or other user-specific information is required? In our case, for assigning Expense we need a matching employee ID. Ideally this would be something like an %EmployeeID% variable but I haven't found any documentation that such a feature exists. The same goes for making an assignment in People, which should be able to reference a Zoho One user's Employee ID, location, department, and designation without needing to set a specific selection that will be applied to all of the group's members.

Without the ability to dynamically populate these fields based on user, there's no reason to use Groups instead of manual assignment, at least for any workflows like this.
