Zoho Sign: need to leave document pending for up to a year, or maybe there's a better way?

I have zoho one, maybe there's a better way to do this with another service than sending a zoho sign template from zoho crm.  At the end of the day this requirement is due to regulations, no matter how dumb it may seem.  I'm just looking for a way of getting this done and open to suggestions.  

Once a lead enters the sales funnel, and before we give them a presentation, we have to have them sign a form of understanding as to what their rights are.  We have to enter the sales date on the form, now sometimes the sales date is after the presentation.  In fact once the form is signed by the prospect it's good for a 12 months from the date of signature until a sale is made.  So we could use the same form to cover multiple presentations.  So what we've been doing is setting that the form is good for 99 days, but some prospects get annoyed signing the same doc over and over.  Esp since right we're also scheduling some presentations for up to 2 months out, and we send the docs out when scheduling the presentation, which doesn't give much time.

Is there any way to have the prospect sign this form and 1.) keep it open for 365 days. 2.) have us sign it, and then amend it later with the sales date?  In theory we could just print it and pencil in the sales date and then scan it, but that's jank.  Adobe won't let us edit a signed document understandably. 

The good news is we don't require a full e-sign paper trail signature like we might on a legal contract, something tracking their IP, date/time of their signature is good enough.  The document is a standardized pdf and we can't create our own doc on the fly, we have to reuse the standardized pdf that has been approved as is.
