Help Desk system does not handle Japanese text responding to support request by email.. It is Garbled. (mojibake)

Hello,

I am having an issue where whenever the email system in help desks touches an email that has Japanese, it will garble the characters. of the email replies, acknowledgments and updates to the requester and the tech.

Entering Japanese from within the help desk application, which then notifies the requester and the tech, the Japanese text is fine.  So it is just when support requests are sent by email and the system then sends notifications.

Any ideas?
