I have forms associated with different projects. Can I have a different admin.userid associated with different forms?

As an example, suppose I had ITmanager@mycompany.com as userid, and also had projectmanager@mycompany.com as a userid.

For my IT forms, I want the email notification sent from ITmanager@mycompany.com but for my project tracking forms, I want email notification sent from projectmanager@mycompany.com.

Is this possible?
