I have tested this function to convert pdf files to text and have found that it works, but in very many cases (almost all) it returns the same text over and over again repeatedly. This of course is not the original text, but a massive rewrite that causes issues when we try to read the text and understand.

This is all I do in my workflow to get this behavior. The file came in through email import:

info zoho.ai.recognizeText(input.ZC_File0).getJSON("text");

Please test, confirm and correct!
