For quotes: If I add a line item with another currency selected other than the reference currency the reference currency price is used. I.e. The currency conversion is not done. The result is that one has to do the whole quote with the reference currency selected and at the end select the currency you want to quote in.
This may not sound like such a difficult process but the challenge is when quotes are being updated. They first have to be converted to the reference currency, then changed and then the currency has to be changed again. This was not how the old UI worked. IT is painful and I think the developers need to fix this.
