Auto STAGE Update based on contact activity

I've about 20-30% conversion rate. I managed to create a workflow rule that once I send the offer and there is no activity on the deal for 2 weeks - deal stage automaticly changes to "No intrest, lost deal".

I want to create a similar workflow rule for the opposite case.

So if contact reaches out in any way -> email/phone call AFTER receiving my quote -> I want the system to automaticly change its stage to "High potential".

Any ideas how to create this kind of rule?
