Basic Questions - we don't start from Leads? Shall I do a custom module?

Hi there - pretty new to Zoho CRM

1. OK - with Leads in our company we know who the customer is (Accounts / Contacts in Zoho) - and we would I guess jump straight to "Potentials" - which should work with some modification.

Does this seem logical?

2. So the next thing is that I will have to modify the Stages in the Potentials module a bit. Which should be fine. Will this affect anything I can't think of?

3. The other issue is that when in Zoho you go to do a Quote the Subject is a mandatory field - I guess I don't need that and can remove it?

4. Our Quotes are not "item based" and are generally like "Thanks for allowing us to price this job. To do XYZ {a few paragraphs of text} the price will be.."  But I can't see how that can be done...? And there are certain paragraphs which are standard to every Quote letter.
