Calls are overwriting fields information

I have this problem : when a customer calls the service line tracked by Call Tracking Metrics, the existing lead information is updated. How can I prevent certain fields in the lead record from being overwritten, regardless of the source (e.g., phone call or perhaps chat)? Specifically, if a lead is associated with a phone number and interacts through various channels (such as a call or chat), I want to ensure that the existing information in certain fields is not overwritten. How can I do that?
