change the name shown in the 'from:' header

Hi,

Even after updating my profile, logging out and back in, and all the other instructions I could find on the forums and the help pages, I am unable to change the name that appears in the 'from: so and so < abc@xyz.com>' header that appears in the emails I have sent.

what gives??
