Contact Roles: Option to customise columns

Contact Roles: Option to customise columns

When converting a Lead one of the pick lists is to select a Contact Role.  I can not find where the values for the pick list for the Contact Lead are maintained.  Answers in older posts don't match current screens.

Once a Contact Role is selected, how is later maintained?  It doesn't seem to be an available field within the Contacts or Deals.

Finally, if we don't want it, is there a way to remove it as a field when converting?
