Converting from multiple Quotes fields?

I am a little confused as to how I can work this.

I have 3 sections in the layout for our Quotes page for multiple quotes.

I want to convert to a Sales Order from a previously created Quote. This issue here is I want to take the information from one of the three sections made in the quote, to make one record for a sales order.

I would understand how to do this if it was always taking information from the same fields. But can I do this?
