Create document folder/document template based on picklist selection both on Projects and Tasks

I've created an ECN (Engineering Change Notice) project layout and it would be really beneficial for us to have the ability to automatically create a document folder and also related document templates based on the "Affected Areas" picklist field selections when creating a new ECN project.

Also automatically triggering a reminder task to fill out the automatically created document template would be a plus.

PS: I've also requested the addition of "Checkbox" type of fields into the project layouts.
