Creator sign-up database

I would like to create a sign-up database for volunteers and volunteer duties. Creating the database is not a problem but when the next volunteer registers I would like for the previous volunteers task that they signed up for not to show and this new volunteer can choose from the volunteer tasks that are left.

I dont know how to accomplish this.
