Customization - adding new values

Hi,

I am using Zoho CRM to maintain contacts and follow-up with members served by our non-profit organization. When I first created custom fields, I entered the fields and values I thought we would need. I have since gone back and added some values to several fields but I noticed that those values don't show up in the drop down menu for that field when I'm entering a new contact. This is really important. 

How can I make those new values visible? It won't let me enter them manually, either. And I have over 100 contacts now, so I don't want to have to start a whole new account and re-enter all the data.

I also noticed that for the write-in fields that are blank (i.e., occupation), the field isn't long enough to enter more than several characters, which means it always cuts off before I can type in the whole word.

Does anyone have advice? I very much appreciate the support, as I'm a new user.
