Email is on google via IMAP - how can I keep emails appearing in relevant CRM contacts after closing an account?

Hi there

We were advised to set up google email via IMAP and have it nicely working. How can I remove gmail and Zoho users though and still have their emails appear in Zoho CRM in the client record?
