Emails - when sending an email how do I select who it goes to?

Emails - when sending an email how do I select who it goes to?

Help!

I now have no way of selecting what contacts I send an email to ......  Unless I am missing something!!!

Previously you could open up a window and select the contacts.  This seems to have now disappeared.
