Entering Item details into sales forms - editing amount value

We can edit the rate for the items but not the calculated amount value, it is extremely difficult to calculate a rate that would match the amount you want it to be if we are dealing with fractional amounts in quantity. As we are able to amend the rate then it would also make sense to be able to amend the amount, this would then auto amend the rate based on the quantity !
