Forecast type for service type businesses / many stages past winning the sale before closing

I'm working on building out our Analytics and have encountered a few challenges. We are a service / contracting type business. Our stages are shown below:



From a sales side, anything starting at 04 is technically a "Closed Won" sale. We've sent the proposal and the customer accepted the work. However, we are continuing to use CRM Stages (FSM, not quite developed enough yet.. Projects... most of our jobs are too small for Projects) as it works best for us.

The challenge is by declaring our approved work pipeline in Open (ie stages 04 - 06), we are not fully able to use Zoho Analytics the way intended. Hit to bid ratio and other formulas don't quite work. I'm sure this affects CRM Dashboard KPI's and other functions.

I could define 04-06 as "Closed Won", but then that affects formulas such as "Age in Days". We want the Deal to continue to age until we complete the work, rather than the age stop when we move to a "Won Closed" stage and "Closing Date" is filled in.

Anyone encounter the same? Looking for best ways to tackle this.
