Help in contact Contact Details

Hello! 
is it possible to change the name os name of fields when we are creating a database of client ?

And is it possible to change the display of the contacts on the Tablets, because my contacts are all organized by the surname and some customers like Ana appears on the end off the contact because the surname is zeca?
