How can I change the product or price in a quote?

How can I change the product or price in a quote?

Once we have completed and saved a quote, we sometimes need to go back in and change the product selected or price for that product, discounts etc. as these are often negotiated over time. It doesn't let us go back and make changes to the product details section. But it will let me edit everything else. . Am I missing something?
