How do I charge taxes per line item

When creating a quote or an invoice, how do I charge tax per line item instead of charging taxes for the total quote/invoice amount?

I have certain products that are taxable and certain services that are not taxable that are combined in my quotes/invoices and I need to separate the two to give me an accurate total.
