How do I collect email from all users in one account?

I need to establish a Journal account or something similar to collect emails from all users in my domain. We used to use Exchange Server for email, which had a catch-all for all incoming and outgoing emails. I NEED to have a primary account that accomplishes the same function as an Exchange Server's Journal account.

I have been steered towards the CRM Outlook Plugin and CRM Zoho Mail plugin, but that does not seem to accomplish the goal of collecting all email in 1 mailbox. 

What options do I have?
