How do I see what emails have been sent when using the Send Email button with an Email Template

How do I see what emails have been sent when using the Send Email button with an Email Template

I can find no way to see which contacts I have sent emails to using the Send Email Button in potentials.  Is there a report or something or a way to CC my outlook email account so at least I can have a copy of the email that went out.
