How do you change the fields available under Contacts when in an Account View ?

How do you change the fields available under Contacts when in an Account View ?

Would like to know how to change add/delete fields that are visible when looking at a contact under an Account view? 

The current fields are:


Contact Name Email Phone Mobile Fax

and would like to change them to delete "Fax" field and add "Title"  also would be great to know how to re-arrange the order if possible as well......  Tried under Setup but that does not change this particular view....
