I then want to be to track the workflow of this i.e.:

Ready to draft the Will? Yes/No
Date Draft Emailed to Clients for checking
Date Confirmation Received
Date original Will sent
Date signed documents received
Lasting Power of Attorney project:
Ready to draft the LPA?
Date Part A sent to clients
Date signed Part received from clients
Date Part C sent to clients
Date signed Part C received from clients
Are the documents being registered? Yes or no
If yes then:
Is the client entitled to a registration fee discount (because of benefits etc)
Date registration form sent to clients
This goes an on and on but my question is what is the best way to record this project management?
Is it in cases? Workflow? Tasks? Something else?
Storage Project:
Documents being stored (then have a multi-select for documents being stored)
Date documents sent to storage facility
Date storage certificate received
Date storage certificate sent to clients
Are you able to help advise me which category I should begin building my project within? I will want to check on the status of the project, for example all Wills that were confirmed during the week would have their status changed to 'Confirmation Received' and then on a Monday I can search for all the projects that say 'Confirmation Received' and then send their documents to them.
