How to change the NAME of a required field?

How to change the NAME of a required field?

I understand that Zoho has Mandatory/Required fields (no idea why, with some simple code this could be rectified)......

But how do you change the name of such fields.  For example....I need to change the Last Name field to just NAME or in the Solutions module....change the field Solutions Title to something more descriptive?
