How to track when things fall out of the pipeline

I'm really struggling with some of the reporting functionality in Zoho CRM and I'm concerned that Zoho won't actually be able to do what I need it to! If anyone has any suggestions to get the following data, I'd really appreciate it:

1) I need to see where things are falling out of my sales pipeline. 

At the moment we have sales statuses for leads and for potentials. I need to know when something is converted from an 'Interest - Call Back' to 'Dead,' 'Demo' to 'Dead,' 'Waiting for Payment' to 'Dead' and so on. I can't seem to figure out what the leakage is at each stage of the pipeline because there is no way of tracking something based on what its status was *before* it was marked as dead.

2) Does anyone have any useful suggestions for managing a pipeline that stretches across leads and potentials? 

I find it absolutely maddening that I can't generate reports that look at both of these categories together but at the moment both form part of our sales process and I'd love to hear any suggestions on viewing these together.
