Inventory Analysis

I've been using Zoho for a while now and I'd like to start using it to track and analyze my inventory.  What I need to do is simple.  I take an inventory the 1st of every month.  I use a spreadsheet to store all the inventory data.  I'm trying to figure out the best way to store, track and analyze inventory month-to-month in Zoho.  Should I use the products section of CRM or create a database?  Either way, how can I take a snapshot of each inventory period and analyze usage month-to-month?  Thanks.
