Look up to users

Hi

I am trying to create a custom field in Projects having lookup to users. Is it possible? Also, I need to create a formula field where I am trying to subtract created date of the project record from a custom date field. It seems, we do not have a "Created Date" field on Projects by default. How can I have a formula field where I can subtract "Created Date" from a custom date field.
