Mail address

I have probable asked this before but can you make the address field names for mail and shipping changable so that UK addressing can be used. I curently use House No. Street, Area, Town, County, Postcode, Country, I created custom fields to get round the problem but the google map doesn't locate (only uses mailing and shipping), and then all the quotes, order and invoice etc generation is thrown too.
