Merging Lead Data into Newly Created Lead Field

I currently have too many options for my "industry" field under my Leads, and want to condense it down. I want to be able to merge my previous industry options into my new industry options, so that I do not have to manually update all of the industries for every single lead.

I've been told this is possible but cannot figure out how.
