Mortgage broker products

We are a mortgage broker and never have the same product more than twice running. I have set up the structure as B2C but here are my situations:

* each mortgage we do has a separate application number, amount, rate etc; what is the best way from a Potential to set this up? Do I have to set up a new Product each time?
