Not Sure I'm Using Potential Correctly

Hello. 

I am trying out Zoho as a more of a business tracker than a CRM, so I'm not surprised that I have to fiddle with things a bit more. I have recently started as a mystery shopper and would like to track the companies that offer mystery shops, their clients (at whose stores I mystery shop), and the income from said shops. 

I have renamed "Accounts" to "Companies," "Potentials" to "Clients," and "Activities" to "Shops." There will certainly be several Clients for each company, and there will also be several Shops for each client (based on distance, requirements, etc). 

When I find an interesting mystery shop at a company's website I'd like to create a new client item in Zoho, containing the client's information and how much the company offers to pay. I have modified the Stage categories to be relevant for my use, but it seems like when I enter the Amount & select the Stage in the Client page, the Expected Revenue field stays blank, or stays at 0.00 even once a shop is completed (i.e. the potential is 'closed-won' and at 100%) - it never updates.

In effect, I'd like to use the Client (aka Potential) tab to track how much I can expect to get paid and track when payments actually arrive.

I guess my first question is whether this peg is too square for this particular round hole. Can you think of a better way to accomplish what I"m trying to do, even if it's a different tool?
