Notification Email content

Can we customize the content in notification emails?

For example:  when a a Potential is re-assigned to a new user, the automatic email only includes the potential name, and nothing else.  It would be great if the Related-To (Account Name) or other fields in the Potential could be included.

Same goes for task notification emails.

Can this be done?
