Product Churn in CRM

Hi guys, 

We're using products, deals and Quotes for accounts in CRM. Here's our workflow: 
  1. Account Manager creates a deal
  2. And then, create a quote including products and their list prices inside Deal 
  3. When deal is closed won, products are inserted to product area of Account in CRM. 
What I want to calculate is my product churn rate and gather it's reasons from my account management team. Majority of our customers use more than 1 products and as time goes, they might want to churn one of the products. How should I ask my account manager to clarify that churn in CRM? 

I also want to calculate churn products, their lost MRR while my reporting is working. What would be your suggestions?
