QUOTES AND INVOICES

Hi I just bought the CRM 2 user plan and I am still going trough all the details of learning the system
My questions are the following:
1- how do i change the fromat and detail information of a quote and invoice. In the edition of those pages I am, no able to change or add fields to the quote format and also invoicing.
I need to add the item code for example to these formats
