Read Only Reference Field

I am working in the Cases module and there is a system field called "Related To" that allows you to select a contact from the the Contacts Module.  It then auto-populates the contact's Email and Phone Number from the Contacts Module below it.  I would like to do something similar for other fields and pull in read-only, related information into the ticket.  I attached a screen shot showing the fields in question.  The email and phone fields have a lock icon on them.  I can't seem to find where I can add those types of fields.

The other cool thing that it does is when you select the Company Name, it only shows you choices that are related to that Company (rather than everyone in the Contacts Module).  I can't figure out how to do that with anything else either.  It seems like you should be able to.
