Typically, if a company needs the Sales people to access their customers database while they do not want them to be able to export their customer data, the company still want them to be able to export emails so as to, for instance, generate mailings via an external marketing tool, a very basic operation for any sales person.

The Zoho Profile Setup screen makes possible to allow specific users to export or not Accounts, Leads, etc., but there's currently no way to restrict the exportation to specific fields. As a matter of fact, the company is stuck in a black or white situation: making possible for the sales people to generate emailings allowing them at the same time to export all of the company's customer data or protecting their database while it makes impossible for the sales people to export emails.

A positive move would be to make possible to restrict the right to export to specific fields.
