Send an Email Template from Different Email Address

I have a number of different emails that I want to use to help with allocation of Tasks.
When I create a Form and a Customer responds, I then use certain email templates to respond. Options I have to respond could be noreply@ admin@ just as examples.

So when I pick a template, how can I make it default to a From: admin@ or noreply@ just as a couple of examples.
I don't want my personal email address to be known to all and sundrie, or I will be inundated with emails etc

Is this possible?
