Tasks - Cancelled

On occasion a task is created, worked on, then cancelled or abandoned.
While updating the Status field to 'Completed' removes the task from the Active lists, the descriptor is inaccurate.
I have created another drop-down option called 'Cancelled' and would like to know how to code this option to automatically move the task from Open to Closed Activities.
